Italian fine dining with Sicilian roots, for an extended lunch or a full evening dinner.
Il Gattopardo opened on the eastern corner of Deliplein in 2021. Due to the pandemic, the real start followed in 2022. Host Vincent Muller and chef Salvatore Randazzo joined forces to present their vision of Italy: pure, refined and focused on detail. This is not a standard Italian restaurant. It is fine dining with a maximum of 26 guests. Everything revolves around quality, from ingredients and presentation to service and overall experience. That also means going the extra mile to source the right products and materials.
Who is in the kitchen?
Vincent: “Chef Salvatore cooks the way he learned at home. You eat pizza at a pizzeria, pasta somewhere else. Here we focus on classical Italian cuisine at a high level. Most of our chefs are Italian, and you can taste it. We work with authentic recipes and top ingredients. Guests sometimes say, ‘I often travel from Milan to the Netherlands, but this risotto tastes like my mother’s.’ That is the greatest compliment.”
How does the menu work?
“On Wednesday and Thursday you can choose 3, 4 or 5 courses. A vegetarian option is available on request. On Friday and Saturday we serve only the 5 course menu or à la carte. We do this on purpose. It is often fully booked and we want to give every guest the time and attention this cuisine deserves. Reservations are required on weekends and recommended on weekdays, with prepayment. Think of it as a full evening out, not a quick bite.”
And the wines?
“They are, of course, Italian. No standard wine list, but small wineries and family estates with limited production. Wines with a story that pair perfectly with the dishes. You can order individual glasses, but many guests choose a wine pairing. We also offer a driver pairing with half glasses. You get the full taste and combination, matched to 3, 4 or 5 courses.”
