On Deliplein you’ll find NOTK, the restaurant of Lukas Wiegman and Thomas Traa. Lukas is currently the Best Sommelier of the Netherlands. In the restaurant, that mainly translates into one thing: attention. Attention to wine, service and the guest. NOTK feels like a neighborhood spot where you can walk in easily, while serious thought goes into what ends up in your glass.
What does NOTK stand for?
Lukas: “It’s a nod to ‘enoteca,’ an Italian term for a place where wine is stored and enjoyed. That idea suits us. Our place was born out of love for wine. We serve and sell top-quality wines, but in an approachable way. You don’t need to be an expert to enjoy something great.”
What can I expect when I walk in?
“You’ll be welcomed the way we like to be welcomed ourselves. You can make it as big or small as you want. A good glass with a snack, or a four, five or six-course sommelier menu. We cook to match the wines. That keeps it exciting because the menu changes with the seasons. There is also an à la carte menu and a bites menu. So you decide how extensive you want it to be.”
Is NOTK just a restaurant?
“No, it’s more than that. We import our own wines, supply to hospitality venues, organize wine trips and create wine experiences on location. In our restaurant we’re not allowed to sell bottles, but we do have a webshop. If you enjoyed a wine here, you can easily order it for home.”
